Guys, I am on a mission! I have nothing but love for caramel flan, so I decided to challenge myself and recreate all the different types and flavors of flan known to mankind in my kitchen.

I googled a few ideas for my plan for flan this afternoon, and in under 10 minutes of a quick search, I was blown away by how many delicious ways one can make this classic custard! Orange, mocha, pumpkin, cream cheese, sweet potato, pineapple, dulce de leche, and so much more!
To start off the series is coffee flan. Creamy, velvety soft, and with the most intense coffee flavor, it's a delicious way to get your caffeine fix.
Plus, it's super easy to make using a genius hack of caramelizing sugar in the microwave. You'll have a luscious treat in five simple steps!
Recipe overview
- Make the caramel in the microwave.
- Pour the caramel in the ramekins to cover the bottom.
- Combine the milk and the eggs until well-blended, strain the mixture using a fine mesh sieve, and pour into the prepared ramekins.
- Cover ramekins tightly with foil, set on a bain marie or steamer, and bake or steam until custard is mostly set.
- Let cool completely, invert on a serving platter, and enjoy!
This coffee-flavored custard is softer and less creamy than our classic Filipino leche flan as it uses whole eggs. And because it's more liquid from the egg whites, it has a tendency to bubble up.
How to make flan smooth
- Stir the eggs and milk in one direction and refrain from beating vigorously which can introduce air to the mixture.
- Strain the mixture using a cheesecloth or fine-mesh sieve to remove any stray whites.
- If the mixture appears foamy, let stand for a few minutes for the bubbles to subside.
- Do not steam or bake at too high temperature. Use a water bath or bain marie to ensure the temperature rises slowly and the custard thickens gradually.
- Do not overcook. The flan is done when a insert a toothpick in the center comes out clean.
Cooking tips
- If you prefer a lighter custard, substitute regular milk for the evaporated.
- For a richer flavor and denser texture, use 12 egg yolks instead of 6 whole eggs.
- Don't forget to add salt! A small pinchย will help cut through the bitterness of the coffee for a smoother taste.
- Dissolve the instant coffee granules in a tablespoon of warm water and allow to cool completely before adding to the egg-milk mixture.
How to store
- Allow the custard to cool complete and refrigerate for up to 3 days.
- It's best to keep in the ramekins with the foil cover intact to maintain the quality. Invert on a plate when ready to serve.
- If already removed from the ramekins, transfer to flan to a container with a tight-fitting lid to keep the caramel and custard from drying out.

- ยฝ cup sugar
- 2 tablespoons water
- 6 large eggs
- 1 can (14 ounces) sweetened condensed milk
- 1 can (12 ounces) evaporated milk
- 2 tablespoons instant coffee granules
- 1 tablespoon warm water
- 1 teaspoon vanilla extract
- โ teaspoon salt

- 4 llaneras or 12 ramekins
Instructions
- In a clear, microwave-safe bowl, combine water and sugar. Stir well under sugar is completely dissolved.
- Microwave on high for about 4 to 5 minutes or until color changes to honey-gold. Immediately pour into llaneras or ramekins and swirl to coat the bottom.
- In a bowl, gently whisk eggs until there are no streaks of white.
- Add condensed milk and stir until combined.
- Add evaporated milk and stir until well-combined.ย
- Using a fine-mesh sieve or cheesecloth, strain the custard mixture.
- ย In a small bowl, combine coffee granules and warm water. Stir until coffee is completely dissolved and let cool completely.
- Add dissolved coffee, vanilla extract, and salt to the strained custard and stir until blended.ย
- Pour into prepared ramekins. Cover ramekins with foil and arrange in a wide, oven-safe dish with about 1-inch of water (water bath).
- Bake in a 375 F oven for about 40 to 50 minutes or until a toothpick inserted in the middle of the custard comes out clean.
- Remove from oven, allow to cool, and refrigerate to set.
- To serve, turn flan over on a serving plate, ending with caramel on top.

I am sorry, I can't tell you how much you pwede mo benta dahili hindi ko alam kung magkano mo nabibili and mga ingredients where you're. Just do the costing; add mo lang lahat nang ingredients plus factor mo rin foil na ginamit, gas etc. The recipe yields 4 llaneras so divide mo lang by 4 yung total na gastos mo to make them, then mark up mo lang sila nang 30 % to 35 % I think would be reasonable. Hope this helps!

I think regular milk (homogenized milk ang tawag dito sa U.S.) is fresh milk sa Philippines. I've seen them sa supermarkets diyan sa tetra pak ๐

sinubukan ko po ang fresh milk ung lasa nya parang nag tubig .And i also tried Evap.. much better po ang taste kaso ang outcome both fresh and evap may bubbles siya.. kahit ginamitan ko ng fine mesh sieve pano po yun .. thank you..

Fresh brewed coffee might not be strong enough to impart flavor as the instant coffee is dissolved in about 1 tabespoon of warm water only.
