Creamy Pork Steak is a delicious reinvention of the classic Filipino dish, the pork bistek. It's easy to make but delivers a hearty, luscious taste. Thinly sliced pork shoulder is cooked in a citrus-soy sauce mixture until fork-tender, sautรฉed until lightly browned, and then finished with all-purpose cream.

Ingredient notes
- Pork Shoulder- Ask the butcher to slice the pork thinly to about ยผ inches thick. Alternatively, you can use pork sirloin or pork chops.
- Calamansi Juice- adds the distinct tangy flavor of bistek. It can be substituted with lemon or lime juice.
- Soy Sauce- for a salty and savory boost
- Water- add more or less depending on the desired sauciness
- Brown Sugar- balances the flavors with a hint of sweetness. If using white sugar, adjust accordingly.
- Oil- for sauteing

Creamy pork steak cooking steps
- Combine pork shoulder, calamansi juice, soy sauce, water, brown sugar, and pepper in a pot. Stir to distribute. Cover with lid and bring to a boil, occasionally skimming scum that floats on top.
- Lower heat and simmer until pork is tender. Drain pork well and reserve cooking liquid.
- Saute onions and garlic in a wide pan until softened. Add pork and cook until lightly browned.
- Add the reserved liquid and all-purpose cream. Season with salt and pepper to taste. Stir to distribute and simmer until heated through and slightly thickened. When the cream is added, do not bring it to a boil; cook on a gentle heat, as drastic temperature changes can make the sauce curdle or separate.

Slice the pork across the grain for a more tender chew.
How to serve and store
- Creamy Pork steak, like the classic Filipino beef Steak, is a great main dish for lunch or dinner. It is best enjoyed with hot steamed rice. Before serving, garnish the dish with fresh onion rings.

Instructions
- In a pot, combine pork shoulder, calamansi juice, soy sauce, water, brown sugar, and pepper. Stir to distribute. Cover with the lid and bring to a boil. Occasionally skim the scum that floats on top.
- Lower heat and simmer for about 40 to 60 minutes until tender. Drain pork well and reserve the cooking liquid.
- In a wide pan over medium heat, heat oil. Add onions and garlic and cook until softened.ย
- Add pork and cook until lightly browned.ย Add reserved liquid and all-purpose cream. Stir to distribute.
- Add salt and pepper to taste. Simmer until heated through and slightly thickened.
