Remember all my big talk about being more deliberate about my content and my blah-blah-blah about scheduling what I cook weeks in advance? Well, scrap that! I did have a list of recipes I was going to work on this weekend but then I saw photos of these leche puto on my FB newsfeed today and all plans were kicked to the curb. I just had to make them ASAP!
I know how to make smooth, velvety leche flan and I've learned the secret to soft, fluffy puto months ago but how to put them together into one sweet treat in two delectable layers? I had to look to Google for answers. And sure enough, I found after a quick search what seems, judging from the number of complimentary comments, to be a solid recipe/tutorial at Heart of Mary. And guys, puto flan is just one of the delicious things you'll find there. ย I am totally blog-crushing! I've never seen so many cakes and dessert recipes I want to try in one place! These puto flan came out so perfectly soft, fluffy and yummy, I have high hopes for herย special ensaymadaย to be just as wonderful.
Ingredients
- 2 tablespoons butter melted
For the Flan
- 4 egg yolks
- 1 can (14 ounces) condensed milk
For the Puto
- 2 cups flour
- โ cup sugar
- 4 ยฝ teaspoons baking powder
- ยฝ teaspoon salt
- 1 ยผ cup water
- 4 egg whites
Instructions
- Prepare puto molds by lightly brushing insides with melted butter. Set aside. Add water to lower bottom of the steamer and bring to a boil.
- In a bowl, combine egg yolks, condensed milk, and calamansi juice. Stir together in a circular motion until smooth and well blended.
- Fill molds to โ full of the flan mixture. Arrange in a single layer on the steamer basket. Wrap steamer cover with clean kitchen towel.
- Steam flan at low heat for about 5 to 7 minutes or until mixture is no longer liquid but not fully set. Remove from heat and allow to cool completely.
- Meanwhile, in a large bowl, sift together flour, sugar, baking powder. and salt. Add water and egg whites. Stir together until just combined.
- Add puto mixture over flan, filling molds almost to the top. Steam on low heat for about 8 to 10 minutes or until puto has risen.
- Remove from heat and allow to slightly cool. Gently remove leche puto from molds.

I think it might work as water bath is the same principle as steaming. I actually cook my leche flan this eay. Just make sure they're tightly covered so the steam or heat doesn't eascape. Please let me know how they turn out. ๐

I am sorry to hear that. The reason I think is because the flan was overcooked? It should not be liquid but not fully set when you add the layer of puto so they'll bind together at the second steaming.

I finally made these for Easter and they turned out amazing! I steamed the flan part for 7 mins, like you said. But the puto needed more time than you directed. I had it steamed for ~20 mins. Great recipe, thank you!

We tried your recipe last week, but we have some issues we followed the baking time for puto and it turned out that some of it inside is not yet cooked so we cooked the second batch for 13 minutes and it was cooked but when the puto was cold, it was not that soft. though the flan was really yummy.

The cook/steam time is based on small puto cups (1 ounce in size) so you might have to adjust the number of minutes depending on the size of puto molds you use. As most bread, the puto does harden a little in the refrigerator. I usually zap them for about 20 to 30 seconds in the microwave to soften them a little or leave them out in room temperature for a few minutes.

I have tried these today and they are very good, but the leche is really super, super sweet. Is there a way to do this less sweet (like less condensed milk mixed with regular or evaporated milk or something? Would the leche still thicken if I do that?)

I followed her recipe as is and didn't mess with the ingredients as I was worried that the flan won't thicken. I am sorry you found the flan part too sweet, I have high tolerance for sweet foods so they were just right for me. You might try adding 1/2 cup of evap to the flan mixture to temper the sweetness and steam the flan longer.
