Salt and Pepper Shrimp

Salt and Pepper Shrimp are sure to rock your tastebuds! Crispy shrimp are tossed in an amazingly flavorful array of salt, pepper, and other aromatics. They're a restaurant favorite for a reason!

Ingredients

  • 2 pounds large shrimp, head-on and shell-on
  • ½ cup flour
  • ½ cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • oil
  • 1 head garlic, peeled and minced
  • 2 jalapenos, cut into thin slices
  • ½ cup green onions, chopped

Instructions

  • Trim tendrils and claws off shrimp and rinse under cold running water. Drain well and pat dry.
  • In a bowl, combine flour, cornstarch, ½ of the pepper, and ½ of the salt. Dredge shrimp in flour mixture until coated.
  • In a wide, deep pan over medium heat, heat about 2 inches oil to about 350 F. Add shrimp in batches and cook for about 2 to 3 minutes or until crisp and color changes.
  • Remove shrimp from the pan and drain on a colander. Reserve 2 tablespoons of the frying oil.
  • In a wide skillet over high heat, add the 2 tablespoons reserved oil and heat until hot. Add garlic, jalapenos, and green onions and saute for about 30 to 40 seconds or until aromatic.
  • Add deep-fried shrimp, the remaining ½ of the salt and ½ of the pepper. Toss for about 20 to 30 seconds until well distributed. Serve hot.

Notes

Drain the shrimp well, and pat dry so the coating adheres well.
